Asian Soups Recipes - Thai Tapioca Soup (Kaeng Chud Saku)

Ingredients

5 cups chicken stock
-
8 oz ground pork
-
1/2
tsp salt

2/3
cup tapioca
-
8 oz crabmeat, shell
and cartilage removed

1 small Chinese
cabbage, shredded
-
1 Tbs soy sauce
Serves
6-8
Method:
-
Bring the chicken
stock to the boil in a large saucepan.

Add the pork
and salt, stirring constantly to separate the meat.
-
Reduce the heat to low and stir in the tapioca.
-
Simmer for 20 minutes, or until the pork is cooked.

Flake the crabmeat and stir into the soup with the
cabbage.

Cover and simmer for 2 to 4 minutes, or
until the crabmeat is heated through.

Stir in the soy sauce
before serving.
