Asian Soups Recipes - Thai Tapioca Soup (Kaeng Chud Saku) Recipe

Ingredients

  • 5 cups chicken stock

  • 8 oz ground pork

  • 1/2 tsp salt

  • 2/3 cup tapioca

  • 8 oz crabmeat, shell and cartilage removed

  • 1 small Chinese cabbage, shredded

  • 1 Tbs soy sauce

Serves 6-8


Method:

  1. Bring the chicken stock to the boil in a large saucepan.

  2. Add the pork and salt, stirring constantly to separate the meat.

  3. Reduce the heat to low and stir in the tapioca.

  4. Simmer for 20 minutes, or until the pork is cooked.

  5. Flake the crabmeat and stir into the soup with the cabbage.

  6. Cover and simmer for 2 to 4 minutes, or until the crabmeat is heated through.

  7. Stir in the soy sauce before serving.
