Asian Vegetables and Accompaniments Recipes - Indonesian Chicken Liver Sambal Recipe

Ingredients

  • 3 Tbs. vegetable oil

  • 2 medium onions, very finely chopped

  • 2 garlic cloves, crushed

  • 1 1/2 lb. chicken livers, cleaned and halved

  • 2-4 red chilies, finely chopped

  • 1 tsp. chopped lemon grass or grated lemon rind

  • 1/2 tsp. laos powder

  • 1 tsp. sugar

  • 1 tsp. salt

  • 2 curry leaves (optional)

  • 1 1/2 cups thick coconut milk

Serves 4-6


Method:

  1. Heat the oil in a large saucepan. When it is hot, add the onions and garlic and fry, stirring occasionally, until the onions are golden brown.

  2. Add the chicken livers and fry until they lose their pinkness.

  3. Stir in all the remaining ingredients and bring to the boil, stirring occasionally.

  4. Reduce the heat to low and simmer for 20 minutes, or until the sauce is thick.

  5. Spoon the sambal into a warmed serving dish and serve at once.
