Recipe
Ingredients

4 eggs
-
1 large onion,
chopped
-
2 garlic cloves
-
1 Tbs. dried
chilies or sambal ulek
-
3 Tbs. peanut oil
-
1/2 tsp. blachan (dried
shrimp paste)
-
1 tsp. sugar
-
1/2
tsp. laos powder
-
1
tsp. chopped lemon
grass or grated lemon rind
-
1 cup coconut milk
Serves
6-8
Method:
-
Hard boil the eggs, then shell and halve them. Set
them aside.

Put the onion, garlic and chilies into a
blender and blend to a rough puree.
-
Heat the oil in
a large, shallow saucepan.
-
When it is hot, add the
onion puree and fry, stirring frequently, for 2
minutes.

Stir in the remaining ingredients and bring
to the boil, stirring constantly.
-
Reduce the heat to
very low and carefully add the egg halves.
-
Simmer
gently until the mixture thickens slightly.
Serve at once.
