Cabbage with Shrimp

Ingredients

3 Tbs. vegetable oil

8
oz. shrimp, shelled

2 medium onions,
sliced
-
1 1/2 in. piece of fresh
green ginger,
peeled and shredded

2 red chilies, finely
chopped

1 medium white
cabbage, shredded
-
1 tsp. salt
-
1/2 in. slice of creamed
coconut, dissolved in 1 1/2 Tbs. boiling water

Method:

Heat the oil in a large frying-pan. When it is hot,
add the prawns or shrimp and fry for 3 to 5 minutes,
or until they are pink and firm. Transfer to a plate
and keep hot.

Add the onions, ginger and
chilies to
the pan and fry, stirring occasionally, until the
onions are soft. Stir in the cabbage and stir-fry
for 2 minutes.

Stir in the salt and coconut
mixture and cook for 5 minutes, stirring frequently.

Stir in
the prawns or shrimp. Serve at once.
Note:
Cabbage with Shrimps, Penang-Style is a brilliant
example of the Oriental ability to make a very
little
go a long way. Here an ordinary white cabbage is
transformed by the addition of ginger and a few
shrimps. The result can either be a vegetable
accompaniment dish, or a light meal on
its own. Or, best of all, it can be served in
the Oriental way, as one of several dishes arranged
all at once on the table.
