Vegetables with Shrimps
Recipe
Ingredients

3 Tbs. peanut oil
-
2 onions, finely
chopped
-
1 garlic clove,
crushed
-
2 green chilies,
finely chopped
-
1 1/2 in. piece of fresh green ginger,
peeled and chopped
-
1 Tbs. ground almonds
-
2 Tbs. soy sauce
-
1/2 tsp. black pepper
-
12 oz. shrimp, shelled
-
1 green pepper, pith
and seeds removed and sliced
-
1 cup green beans
-
2 zucchini, sliced
Serves
6-8
Method:
-
Heat the oil in a large frying-pan. When it is hot, add
the onions, garlic, chilies and ginger and fry, stirring
occasionally, until the onions are golden brown.

Stir in
the ground almonds, soy sauce and pepper and cook for 2
minutes.

Add the prawns or shrimp and stir-fry for 3
minutes. Add the vegetables.

Reduce the heat to low and
simmer the mixture for 10 minutes, or until the
vegetables are cooked through. Serve at once.
