Asian Vegetables and Accompaniments Recipes - Malaysian Mixed Salad ( Rojak) Recipe

Ingredients

  • 1/2 cucumber, diced

  • 1/2 small pineapple, peeled, cored and diced

  • 1 green mango, peeled, pitted and diced

  • 2dried red chilies, crumbled

Dressing:

  • 2 tsp. dried chilies or sambal ulek

  • 1/2 tsp. blachan (dried shrimp paste)

  • 1 Tbs. sugar

  • 1 Tbs. vinegar

  • 1 Tbs. lemon juice

Serves 6


Method:

  1. Put the cucumber, pineapple and mango in a shallow bowl.

  2. Combine all the dressing ingredients in a blender, then pour over the salad.

  3. Toss gently, then scatter over the crumbled chilies.

  4. Set aside at room temperature for 10 minutes before serving.
