Vegetarian Recipes - Stir-fried Crispy Tofu

Ingredients

250g/9oz fried tofu
cubes

30ml/2 tbsp groundnut (peanut) oil

15ml/1 tbsp green
curry paste

30ml/2
tbsp
light soy
sauce
-
2 kaffir lime
leaves, rolled into cylinders and thinly sliced

30ml/2 tbsp sugar
-
150ml/2/3 cup vegetable
stock
-
250g/9oz Asian asparagus, trimmed and
sliced into 5cm/2in
lengths

30ml/2 tbsp roasted
peanuts, finely chopped
Serves 2
Method:

Preheat the grill (broiler) to medium. Place the
tofu cubes in
a grill
pan and grill (broil)
for 2-3 minutes,
then turn them over and
continue to cook until they are crisp
and golden brown all over. Watch them carefully;
they must not be allowed to burn.

Heat the oil in a
wok or heavy frying pan. Add the green curry paste
and cook over a medium heat.
stirring constantly, for 1-2 minutes, until it gives
off its
aroma.

Stir
the soy sauce, lime leaves, sugar
and vegetable
stock
into the wok or pan and mix well. Bring to the boil,
then reduce the heat to low so that the mixture
is just
simmering.

Add the asparagus and simmer gently for 5
minutes. Meanwhile, chop each piece of tofu into
four; then add to the pan with the peanuts.

Toss
to coat
all the ingredients in the
sauce, then spoon into a warmed
dish and serve immediately.
Note: The
asparagus grown in the
part of Asia
where this
recipe originated tends to have slender stalks. Look
for it in Thai markets or substitute the thin
asparagus popularly known as sprue.
Variation:
Substitute slim
carrot
sticks
or broccoli florets for the asparagus.
