Vegetarian Recipes - Stir-fried Water Spinach Recipe

Ingredients

  • 30ml/2 tbsp groundnut (peanut) oil

  • 2 garlic cloves, finely chopped

  • 2 fresh red or green chilies, seeded and finely chopped

  • 500g/1 1/4lb fresh water spinach

  • 45ml/3 tbsp chili sauce

  • salt and ground black pepper

Serves 3-4


Method:

  1. Heat a wok or large pan and add the oil. Stir in the garlic and chilies and stir-fry for 1 minute, then add the water spinach and toss around the pan.

  2. Once the water spinach leaves begin to wilt. add the chili sauce, making sure it coats the spinach.

  3. Season to taste with salt and pepper and serve immediately.

Note: In the countryside, this dish is a favorite with roadside vendors. Water spinach is an excellent source of Vitamin A, which helps to promote healthy bones, skin, hair and also aids vision. Serve this aromatic dish as part of a vegetarian meal, or as a side dish to accompany main meat or fish courses.
