Miso Broth with Mushrooms

Ingredients

1.2 liters/2 pints/5
cups boiling
water

3 tbsp light miso paste
-
3 fresh
shiitake mushrooms, sliced

115g/4 oz tofu
diced

1 spring onion
(scallion), green part only, sliced
Serves 4
Method:

Mix the boiling
water and miso in a pan. Add the mushrooms and simmer for 5 minutes.

Divide the tofu among four warmed soup bowls, ladle in the soup,
scatter with sliced spring onions and serve.
Note: Shiitake mushrooms
give this soup superb flavor.
