Soups Recipes - Sweet and Sour Pork Soup Recipe

Ingredients

  • 900g/2lb pork fillet (tenderloin), trimmed

  • 1 unripe papaya, halved, seeded, peeled and shredded

  • 3 shallots, chopped

  • 5ml/1tsp crushed black peppercorns

  • 5 garlic cloves, chopped

  • 15ml/1 tbsp shrimp paste

  • 30m/12 tbsp vegetable oil

  • 1.5 liters/6 cups chicken stock

  • 2.5cm/1 in piece fresh root ginger, grated

  • 120ml/1/2 cup tamarind water

  • 15ml/1 tbsp honey

  • juice of 1 lime

  • 4 spring onions (scallions), sliced

  • salt and ground black pepper

  • 2 small fresh red chilies, seeded and sliced, to garnish

Serves 6-8


Method:

  1. Cut the pork into very tine strips, 5cm/2in in length. Mix with the papaya and set aside.

  2. Process the shallots, crushed black peppercorns, garlic and shrimp paste together in a food processor or blender to form a paste.

  3. Heat the oil in a heavy pan and fry the shallot paste for 1-2 minutes. Add the stock and bring to the boil.

  4. Reduce the heat. Add the pork and papaya, ginger and tamarind water. Simmer for 7-8 minutes, until the pork is tender.

  5. Stir in the honey, lime juice, most of the chilies and spring onions. Season to taste.

  6. Ladle the soup into bowls and serve at once, garnished with the remaining chilies and onions.

Note: This very quick sharp and tangy soup is perfect for an impromptu supper. It can also be made with shredded chicken breast.
