Chinese Recipes - Almond Jelly

Ingredients

  • 1/2 stick gelatine

  • 1 cup (200 cc) water

  • 100 g (3oz) sugar

  • 1 cup (200 cc) milk

  • almond essence

  • 100 g (3oz) sugar

  • 2 cups (400 cc) water

  • 2 slices pineapple

  • 1/4 melon

  • 6 cherries

  • 3 loquats

  • 1/4 can grapes

  • Ice

8 servings


Method:

  1. Soak gelatine till soft. Drain and tear into small pieces. Add one cup water and heat till dissolved.

  2. Add sugar and continue heating. Sieve. Warm milk and add to gelatine. Sieve again.

  3. Add almond essence. Sieve. Pour into wet bowl and cool until set.

  4. Make syrup by boiling sugar with water. Cool. Cut gelatine into diamond shaped pieces.

  5. Cut fruits into small pieces. Place over jelly in bowl. Add syrup. Add small pieces of ice.
