Chinese Recipes - Braised Asparagus and Chinese Cabbage Recipe
Ingredients
250 g (9 oz) Chinese cabbage
1 bunch asparagus
5 cups (1000 cc) soup stock
salt for seasoning
3 tablespoons lard
2 dried scallops ( soaked)
1 abalone
2 tablespoons oil
1/2 cup (100 cc) soup stock
1 teaspoon cooking wine
1 teaspoon salt
1/2 teaspoon sugar
dash of monosodium glutamate (MSG)
1/2 teaspoon cornstarch
4 servings
Method:
Boil asparagus in boiling soup till tender.
Cut boiled asparagus into 10-12 cm/4-5 inch long pieces.
Sauté Chinese cabbage in lard/oil. Boil in soup stock with 1 1/2 tsp salt till tender.
Cut boiled cabbage about same length as asparagus.
Heat oil. Fry sliced abalone and scallops. Add soup stock and seasoning. Add cabbage and asparagus and simmer. Thicken with cornstarch.
Arrange attractively on platter, with a litter gravy. Steam in hot steamer for 1-2 minutes. Serve while hot.
