Chinese Recipes - Braised Gluten with Vegetables

Ingredients

2 tbsp cooking oil
-
2-3 cubes
fermented white bean curd squares

100g pre-fried
gluten 100g pre-fried vegetarian bean curd
squares

400ml water
-
2 tbsp vegetarian
oyster or oyster sauce
-
1-2 tbsp light soy
sauce
-
50g black fungus,
softened
-
16 button
mushrooms
-
30g lily bulbs,
tied into knots
-
2 tsp corn flour
mixed with 1 tbsp water
-
8 small plants/pak
choy, leave whole and blanched
4 servings
Method:

Heat oil in wok
and stir-fry white bean curd squares for 1
minute.

Add gluten and
vegetable bean curd squares.

Boil with the
water, 2 tbsp oyster sauce, 1-2 tbsp light soy
sauce. Simmer 10 minutes.

Add black fungus,
mushrooms and lily bulbs. Simmer and stir for 2
minutes.

Slowly add corn
flour mixture. Cook until gravy is thick.

Arrange vegetables
on serving plate. Pour mixture over and serve.
Note: To
prepare Fried gluten, stir fry in hot oil until
lightly brown, drain and use as desired.
