Chinese Recipes - Braised Gluten with Vegetables Recipe

Ingredients

  • 2 tbsp cooking oil

  • 2-3 cubes fermented white bean curd squares

  • 100g pre-fried gluten 100g pre-fried vegetarian bean curd squares

  • 400ml water

  • 2 tbsp vegetarian oyster or oyster sauce

  • 1-2 tbsp light soy sauce

  • 50g black fungus, softened

  • 16 button mushrooms

  • 30g lily bulbs, tied into knots

  • 2 tsp corn flour mixed with 1 tbsp water

  • 8 small plants/pak choy, leave whole and blanched

4 servings


Method:

  1. Heat oil in wok and stir-fry white bean curd squares for 1 minute.

  2. Add gluten and vegetable bean curd squares.

  3. Boil with the water, 2 tbsp oyster sauce, 1-2 tbsp light soy sauce. Simmer 10 minutes.

  4. Add black fungus, mushrooms and lily bulbs. Simmer and stir for 2 minutes.

  5. Slowly add corn flour mixture. Cook until gravy is thick.

  6. Arrange vegetables on serving plate. Pour mixture over and serve.

Note: To prepare Fried gluten, stir fry in hot oil until lightly brown, drain and use as desired.
