Chinese Recipes - Cashew Nut with Prawns

Ingredients
Sauce:

Method:

Boil cashew nuts
(raw) in hot boiling water for about 5-10
minutes. Drain well and put aside.

Shell prawns and
season with 1 tsp sugar, 1/2 tsp sesame oil,
1./2 tsp salt, 1/2 egg white, 1 tbsp groundnut
oil and 1 tbsp corn flour. Mix well and keep
aside.

Heat frying pan
with deep fat and hot add in the seasoned prawns
fro just about 2 minutes. Scope up and drain
well. Put the cashew nut to fry till golden
brown.

Pour away deep fat
and add in little lard. Pour in the well mixed
sauce followed by prawns, green peas and cashew
nut.

Fry and put in
serving plate. Decorate with cherries around
plate.
