Chinese Recipes - Chicken Congee Recipe

Ingredients

  • 1/2 fowl

  • 12 cups (2,400 cc) water

  • 1 1/2 cups rice

  • 1 teaspoon salt

  • some green onion

  • soy sauce for seasoning

  • dash of pepper

4 servings


Method:

  1. Wash and clean chicken. Cover with water and bring to boil. Reduce heat. Simmer for 2-3 hours until tender. Reserve soup.

  2. Remove bones from chicken. Cut into pieces and sprinkle with salt.

  3. Wash rice. Add 10 cups of soup from 1 above. Cook over low heat for 1 hour, or until tender. Add chicken meat to pot. Serve.

  4. Add minced green onion, salt, soy sauce and pepper as desired.
