Chinese Recipes - Chicken and Winter Squash Soup Recipe

Ingredients

  • 1/2 chicken

  • 1/2 winter squash

  • 1/2 stalk green onion

  • 1 small ginger

  • 8 cups (1600) water

  • 2 teaspoons salt

  • 1 tablespoon cooking wine

  • dash of monosodium glutamate (MSG)

4 servings


Method:

  1. Cut chicken with bone into 3 cm (1 1/4 inch) pieces. Skin winter squash and remove seeds. Cut into large pieces. Cut green onion and ginger.

  2. Bring chicken, green onion and ginger to boil in 8 cups water. Remove scum. Simmer until tender.

  3. Add winter squash. Simmer until tender. Add seasonings and serve.
