Chinese Recipes - Chinese New Year Turtle Bun Recipe

Ingredients

  • 1 kg baking flour

  • 250 gm sugar

  • 12 gm salt

  • 2 gm dry yeast

  • 40 gm skim milk powder

  • 150 gm egg, whole

  • 460 gm water

  • 50 gm margarine

  • 50 gm butter

  • 1-2 drops, pink food coloring

  • 300 gm cooking chocolate

  • 1 tbsp chocolate chips

  • 100 gm mayonnaise

  • 150 gm chicken floss 

For the Icing:

  • 100 gm icing sugar

  • 10 drops red food coloring 10 gm water


Method:

  1. Follow steps 1 to 3 from the Chinese New Year Fish Bun recipe, and continue  as follows.

  2. Tear off a lump of dough and break into three small sections and one large section. Roll two of the small sections until they resemble dumbbells. Imagine a thin centre and fat ends. These are to be the legs of the turtle.

  3. Roll another small section and make it into an exaggerated teardrop. Make the section long and evenly thin and with a large end. This is to be the head of the turtle.

  4. Flatten the large section with a rolling pin. Add a small chunk of cooking chocolate (about 2-3 small squares) into the flattened lump and seal it. This is to make the shell.

  5. Place the teardrop section on a baking tray, and then add in the legs of the turtle. Then, add in the shell and place chocolate chips for the eyes.

  6. Bake in an oven at 200°C for 12 minutes. When the turtles are done, take them out, and draw a circle on them with the mayonnaise. Sprinkle chicken floss onto the mayonnaise.

  7. Mix the icing sugar, red food coloring and water in a mixing bowl and beat with a beater on high speed until it becomes firm but not too hard.

  8. To enhance the presentation, use the red icing to write prosperous Chinese words onto the back of the turtle. Be sure to pipe icing onto turtles immediately after mixing.
