Method:

Remove bones from crab meat, break into small pieces.
Add wine. Mix 1 teaspoon salt, dash of monosodium
glutamate to slightly beaten egg and blend into crab
meat.

Heat 5 tablespoons oil until smoke and add crab
meat mixture. Fry until half done. Spread to make round
shape.

Turn over to fry other side. Carefully remove to
serving plate.

Heat 1 tablespoon oil, fry shredded
mushroom, add seasoning and soup stock. Simmer over low
heat.

Thicken quickly with cornstarch diluted
with water. Add green peas.

Pour gravy over crab on
plate. Serve while hot.
