Chinese Recipes - Fish Ball Soup Recipe

Ingredients

  • 200g (7oz) white meat fish

  • 1 egg white                                          

  • dash of ginger juice

  • 2 teaspoon salt

  • 2 teaspoon cooking wine                 

  • dash of monosodium glutamate

  • 1 tablespoon cornstarch                  

  • 5 tablespoons water     

  • 5 cups (1000cc) soup stock

  • 100 g (3.5 oz) tender green leaves

  • dash of monosodium glutamate (MSG)

4 servings


Method:

  1. Remove skin from fish. Cut into small pieces and grind while gradually adding 5 tablespoons water.

  2. Beat egg white slightly. Add to fish. Add 1 tsp salt and 1 tsp wine. Mix well. Form into balls and drop into boiling soup.

  3. Remove scum from soup. Cut tender green into 2 cm (1 inch) pieces. Add to soup. Bring to boil. Add 1 tsp salt, 1 tsp wine and MSG and serve.
