Chinese Recipes - Fish Ball Soup
Recipe
Ingredients

200g (7oz) white meat
fish
-
1 egg
white
-
dash of ginger juice
-
2 teaspoon salt
-
2 teaspoon cooking
wine
-
dash of monosodium
glutamate
-
1 tablespoon
cornstarch
-
5 tablespoons
water
-
5 cups (1000cc) soup stock
-
100 g (3.5 oz)
tender green leaves
-
dash of
monosodium glutamate (MSG)
4 servings
Method:

Remove skin from fish. Cut into small pieces and
grind while gradually adding 5 tablespoons water.

Beat egg white slightly. Add to fish. Add
1 tsp salt and 1 tsp wine. Mix well. Form into balls and drop into
boiling soup.

Remove scum from soup. Cut tender green into 2 cm
(1 inch) pieces. Add to soup. Bring to boil. Add
1 tsp salt, 1 tsp wine and MSG and serve.
