Chinese Recipes - Fish Slices in Vinegar Sauce Recipe

Ingredients

  • 300 g (11 oz) fillet of white-meat fish

  • 2 small bamboo shoots

  • 2 dried mushrooms (soaked)

  • 2 green peppers

  • 1/2 egg white

  • 2 tablespoons cornstarch

  • oil for frying

  • 2 tablespoons oil

For sauce:

  • 1 teaspoon salt

  • 1 teaspoon sugar

  • 1 tablespoon vinegar

  • 1/2 cup (100 cc) soup stock

  • dash of monosodium glutamate  (MSG)

  • 1/2 tablespoon cornstarch

4 servings


Method:

  1. Thin slice fish, bamboo shoots and mushrooms. Cut green peppers into 8 sections.

  2. Beat egg white slightly. Add cornstarch. Dip fish in mixture. Deep fry until just before color changes. Set aside.

  3. Heat 2 tablespoons oil. Fry vegetables. Add all sauce seasonings and soup stock.

  4. Thicken with cornstarch mixed with water. Add fish. Serve hot.
