Fried Bean Curd Sticks

Ingredients

Method:
-
Sieve bean curd.
Cut fish in small pieces, mash and add 1 1/2
tablespoons salt, white of one egg. Mix well.

Add
bean curd to fish and mix well.
Blend in sesame oil and 1 tablespoon starch and when
thoroughly mixed, place flat in container.

Steam 20
minutes. When cool, cut into 4 X 2 X 1 cm (2X 1X 1/4
inch) pieces.

Place minced walnut and
ham over cut pieces.

Slice pork fat thinly. Add
cornstarch to slightly beaten egg white and use it
to paste fat slices over the steamed bean curd
sticks.

Coat bean curd sticks with starch.
Heat oil and fry until light brown.
