Chinese Recipes - Fried Chicken Rolls Recipe

Ingredients 

  • 1 lb lean chicken meat, cut into thin slices, 2 in x 1 1/2 in and 1/8 in thick

  • 1 or 2 cooked chicken livers, cut into thin strips

  • 2 oz bamboo shoots, cut into thin strips

  • 6 oz cooking oil

  • 1/2 egg, mix with 1 tbsp of corn flour

Seasoning:

  • 2 1/2 tbsp light soy sauce

6 to 8 servings


Method:

  1. Season the slice of chicken mat with the sauce (oyster sauce), 1 tbsp dark soy sauce, 1 dessertspoonful sugar.

  2. Cut chicken livers and bamboo shoots into thin strips.

  3. Roll each piece of thicken meat with 2strips of bamboo shoot and 2 or 3 strips of chicken liver. Seal each roll with beaten egg mixture.

  4. Fry in shallow oil over a slow fire for 10-15 minutes. Keep on turning whilst frying. More oil or lard can be added.

  5. When cooked, serve on oval dish. Garnish with thin slices of cucumber and tomatoes.
