Chinese Recipes - Fried Chicken Rolls
Recipe
Ingredients
-
1 lb lean chicken
meat, cut into thin slices, 2 in x 1 1/2 in and
1/8 in thick
-
1 or 2 cooked
chicken livers, cut into thin strips
-
2 oz bamboo
shoots, cut into thin strips
-
6 oz cooking oil
-
1/2 egg, mix with
1 tbsp of corn flour
Seasoning:
6 to 8 servings
Method:

Season the
slice of chicken mat with the sauce (oyster
sauce), 1 tbsp dark soy sauce, 1 dessertspoonful
sugar.

Cut chicken
livers and bamboo shoots into thin strips.

Roll each
piece of thicken meat with 2strips of bamboo
shoot and 2 or 3 strips of chicken liver. Seal
each roll with beaten egg mixture.

Fry in
shallow oil over a slow fire for 10-15 minutes.
Keep on turning whilst frying. More oil or lard
can be added.

When cooked,
serve on oval dish. Garnish with thin slices of
cucumber and tomatoes.
