Chinese Recipes - Fried Noodles Recipe
Ingredients
4 bags Chinese noodles
6 tablespoons oil
200 g (7oz) chicken meat
2 teaspoon cooking wine
dash of ginger juice
1/2 teaspoon cornstarch
1 stalk green onion
4 dried mushrooms (soak)
1 slice ham
1 small bamboo shoot
15 sweet peas
2 cups soup stock
1 tablespoon soy sauce
1 1/2 teaspoons salt
dash of monosodium glutamate (MSG)
2 tablespoons cornstarch
2 eggs
dash of salt
2 tablespoons oil
4 servings
Method:
Boil noodles in boiling water. Bring to boil and add cold water. Repeat and bring to boil. Drain. Fry both sides till light brown.
Shred chicken and season with 1 tbsp wine and soy sauce. Remove hard part from sweet peas. Cut ham into 8 pieces. Shred mushrooms and green onion.
Thin slice bamboo shoots. Heat oil and fry chicken and vegetables.
Add soup and the balance of seasoning. Bring to boil. Thicken with cornstarch diluted with water.
Add scrambled eggs. Pour over hot noodles and serve.
