Chinese Recipes - Fried Prawns

Method:

Shell prawns and
cut through centre of prawns like butterfly.
Wash away intestines. Dry prawns by using cloth.

Season prawns with
1/2 tsp soda bicarbonate, little salt, 1 tsp
sugar, 1 tsp MSG, half an egg-white and mix
well.

Lastly, add 1 1/2
tbsp corn flour and 1 tbsp cooking oil. Season
for about 1/2 an hour.

Heat frying pan,
when hot dip the seasoned prawns into batter and
put on oil to fry till brown.

Put on
serving plate and serve immediately with either
chili sauce or sweet and sour sauce.
Note: Don't pour the
sauce on to the prawns but put sauce in saucer and
dip when eating. Ideal for cocktails too.
