Chinese Recipes - Noodles with Gravy Recipe

Ingredients

  • 100 g (3.5oz) chicken

  • 2 teaspoon cooking wine

  • some ginger juice

  • some clouds ears

  • 3 tablespoons dried shrimp

  • 1 stalk celery

  • 1 small bamboo shoot

  • 3 dried mushrooms

  • 6 cups (1,200 cc) soup stock

  • 2 1/2 tablespoons soy sauce

  • 1 teaspoon salt

  • dash of monosodium glutamate (MSG)

  • 3 1/2 tablespoons cornstarch

  • 1 egg

  • 3 bags Chinese noodles

4 servings


Method:

  1. Cut chicken meat into thin strips, season with wine and sprinkle with 1/2 tsp cornstarch. Soak cloud ears and dried shrimp. Julienne cut celery.

  2. Bring soup stock to boil. Separate chicken strips and add to soup. Remove scum. Add dried shrimp, clouds ear, sliced mushroom, bamboo shoot and celery. Cook over medium heat.

  3. Season the soup with soy sauce, salt and MSG. Add cornstarch mixed with water. Add beaten egg in a slow stream. Remove from fire. Serve over hot boiled noodles.


Chinese Recipes - Soup Noodles Recipe

Ingredients

  • 4 bags Chinese noodle

  • 3 leaves Chinese cabbage

  • 2 small bamboo shoots

  • 2 abalones (canned)

  • 3 dried mushrooms (soak)

  • 1 green onion

  • 1 slice ginger

  • 200 g (7oz) pork

  • 1 teaspoon soy sauce

  • 1 teaspoon cooking wine

  • 2 tablespoons oil

  • 10 cups (2,000 cc) soup stock

  • 3 tablespoons soy sauce

  • 2 tablespoons salt

  • 2 tablespoons cooking wine

  • dash of monosodium glutamate (MSG)

  • dash of pepper

Method:

  1. Cut cabbage into 3cm (1 1/4 inch) pieces. Thin slice bamboo shoot, abalone and soaked mushroom. Cut onion and ginger. Slice pork and season with 1 tsp soy sauce and wine.

  2. Heat oil in pan. Sauté onion, ginger and meat till meat changes color. Add mushroom, bamboo shoot, abalone and cabbage. Add soup and season. Cook for 10 minutes.

  3. Cook noodles in large pot with plenty of boiling water. Serve noodles in large bowl. Ladle out the hot soup over noodles.
