Ingredients
4 servings
Method:
-
Thin red bean paste with soy sauce and water if too
thick.

Mince green onion and ginger. Heat 4
tablespoons oil. Add green onion, ginger and ground
pork. Fry till meat changes
color.

Add bean
paste. Stir well and continue frying over medium
heat until oil separates from bean paste.

Remove
both ends from bean sprouts. Parboil. Shred
cucumbers. Scramble eggs in 3 tablespoons oil.

Boil noodles.
Drain. Place in individual bowls. Top with bean
sprouts, cucumber and egg.

Serve with 1-2 tablespoons sauce per
serving.
Vinegar may be added if desired.
