Chinese Recipes - Papaya Cold Dish
Recipe
Ingredients
-
1 1/2 lb Papaya (Peel
the skin, cut into halves, remove the
seeds and clean it well)

3 cakes of egg noodles
-
1 1/2 pints water
-
4 to 6 oz prawns
-
3 beaten eggs
-
1 big onion (cut into
thin strips)
-
2 or 3 tablespoonfuls of lard or cocking oil
-
salt and pepper to
taste
-
1 teaspoonful of
MSG (optional)
-
1 or 2 tablespoonfuls of oyster sauce
-
1 tablespoonful of
sesame oil
-
small bunch of parsley (for
garnishing)
4 servings
Method:
-
Put 1 1/2 pints of water into the saucepan.
Bring to the boil. Add cakes of egg noodles
and simmer for 5 to 8 minutes. Strain well with a
sieve and cut the noodles with a pair of
scissors into 3 or 4 inch long.

Season the
noodles with sesame oil, add oyster sauce (1
tablespoonful of cooking oil or sesame oil
can be added too so that the noodles will not
stick together.) Place these noodles into
centre of the papaya.

Heat the frying pan with cooking oil. Add the thin strips of
onions and fry for 3 minutes. When golden brown,
put in prawns and fry for 3 minutes.

Add beaten
eggs to this and scramble. Whilst frying, add
pepper, salt and MSG. Put this mixture
into the other half of the papaya.

Finally
place the two halves of the papaya onto a
lettuce bed arranged on on oval dish. Garnish
with orchids and parsley.

Put in refrigerator
for 2 to 3 hours and serve whilst cold.
