Chinese Recipes - Paper Wrapped Fish Recipe

Ingredients

  • 200g/7oz white-meat fish

  • 1 tbsp cooking wine

  • dash of salt

  • dash of ginger juice

  • 3 dried mushrooms, soaked

  • 1 stalk green onion, shred

  • 1 slice ginger, shred

  • lard/oil

  • oil for frying

  • 10 pieces wax paper (15 cm/6 inch square)

4 servings 


Method:

  1. Thin slice fish. Season with wine, salt and ginger juice.

  2. Grease center of wax paper with lard. Place fish and some shredded mushroom, green onion and ginger in center.

  3. Wrap as illustrated. Fold paper up  diagonally into triangle.

  4. Fold back upper layer of triangle with corner showing for easy opening. Fold both sides.

  5. Tuck in remaining corner of paper well. Deep fry in 170° (360°F) oil for 2-3 minutes.
