Chinese Recipes - Roast Chicken Recipe

Ingredients 

  • 1 whole chicken

  • 2 lemons (cut and squeeze the lime juice)

  • 2 pints of hot water

  • 2 tablespoonfuls of golden syrup or malted syrup boil with 2 tablespoonfuls of hot water

  • Salt to taste

  • 1 1/2 lbs of cooking oil or vegetable oil

Sweet and Sour Sauce:

  • 3 or 4 tablespoonfuls of apricot jam

  • 2 or 3 tablespoonfuls of vinegar (Stir there 2 ingredients without cooking)

4 servings


Method:

  1. Wash, singe and clean the whole chicken. Bathe the chicken with hot water 2 or 3 times with 2 pints of boiling water. Clean it well.

  2. Rub the chicken with lime juice, then with salt, and paint the whole chicken with golden syrup or malted syrup.

  3. Hang up on string and let it drip until thoroughly dry until thoroughly dry for 4 to 5 hours or hang under the sun dry for 3 to 4 hours. If there is no sun, a hair dryer can be used instead, this will take about 20 minutes. to dry the chicken with the hair­dryer.

  4. Heat the saucepan with cooking oil. When it is hot, hold the chicken with the left hand and bathe with hot all until it is golden brown.

  5. Cut into pieces and serve whilst hot with sweet and Sour sauce.

  6. Garnish the dish with slices of cucumber and tomatoes.

Note: This dish serves 6 to 8 people, if there are 2 or 3 other dishes to go with it.
