Chinese Recipes - Shark Fins Chicken Soup

Ingredients

1 can of Sharks
fins Chicken Soup.

5 or 6 breakfast
cups of chicken stock or 1 1/2 to 2 pints of chicken
stock. (This can be made out of chicken essence and
water).

2 beaten eggs
-
3 or 4 tablespoonfuls
of corn flour mix with 6 tablespoonfuls of cold
water.

2 or 3 oz of
crab-meat (Boil 1/2 lb of crabs for 20
minutes in boiling water. Flake crabs to obtain
crab-meat!.

1 tablespoonful thin
strips of ginger or chopped ginger

1/2 tablespoonfuls of
cooking oil

1 packet Of chicken
essence
-
1 teaspoonful of MSG.

Salt and pepper to taste
Serves 6 to 8 people, if there 2 or 3 other dishes
to eat with it.
Method:

Mix corn flour with cold water (about 5
tablespoonfuls of cold water). This mixture is to
thicken the gravy. Beat eggs for a while.

Heat frying pan or Rice Cooker with cooking oil
or vegetable oil Add chopped ginger or thin strips
of ginger and fry for 2 minutes.

Put in crab-meat and
fry for a while (about 4 to) 5 minutes.) Add the tin of
sharks fins chicken soup into the frying pan or rice
cooker.

Break 1 or 2 cubes of chicken
essence.
Add water and simmer for 5 minutes to 10 minutes.

When
the chicken soup begins to boil. Add corn flour
mixture gradually and stir well.

Put in beaten
eggs slowly and stir slowly so as to prevent the corn flour from forming into a big lump of starch.

Add MSG, pepper and
salt.
Serve whilst hot with malt vinegar or brandy.
