Chinese Recipes - Smoked Fish Recipe

Ingredients

  • 1 carp

  • 4 tablespoons soy sauce

  • 1 tablespoon sugar

  • 1 tablespoon cooking wine

  • dash of ginger juice

  • 1/2 stalk green onion (cut)

  • oil for frying

  • rock sugar

4 servings


Method:

  1. Clean fish. Cut with bone into 2 cm (1in) pieces.

  2. Marinate for 3 hours in soy sauce, sugar, cooking wine, ginger juice, and green onion.

  3. Drain. Deep fry fish in 180° (360°F) oil till golden.

  4. Place rock sugar on pan. Place fish on rack over pan. Smoke in oven for 20 minutes.
