Chinese Recipes - Special Fried Meat Dumpling

Ingredients

Skin:

  • 4 cups (400 g, 14 oz) strong flour

  • 1 1/2 cups (300 cc) hot water

Filling:

  • 400 g (14 oz) Chinese cabbage

  • 1 1/2 teaspoons salt

  • 2 tablespoons soy sauce

  • 1 tablespoon lard

  • 2 tablespoons sesame oil

  • 200 g (7 oz) ground pork

  • 1/2 stalk green onion

  • dash of ginger juice

  • 1 tablespoon cooking wine

  • dash of monosodium glutamate (MSG)

  • 3 tablespoons oil

4 servings


Method:

  1. Make skin as in Fried Meat Dumpling.

  2. Make filling by same method as for Fried Meat Dumpling (refer recipe).

  3. Place filling in center of one skin. Cover with another skin. Press skins firmly around edge.

  4. Make ridges with thumb around edge. Fry in thick pan. Turn 2-3 times till well done.
