Chinese Recipes - Steam Roast Duck Recipe

Ingredients

  • 1 duck about 1 1/2kg

  • 5 strigs of spring onion

  • 2 coriander leaves

  • 2 tsp star anise

  • ginger

  • 2 tsp cloves

  • little coriander leaves and tomato for decoration

4 servings


Method:

  1. Wash and clean duck. season Chinese sauce, black sauce and Chinese Rose wine.

  2. Put duck in a big bowl and put in 5 slices of ginger, star anise, spring onion, cloves and coriander leaves to stem for about s hours or till duck is soft and tender.

  3. After steaming take duck out, throw away the star anise, etc., and deep fry the duck till brown. Drain well. Put in serving dish.

  4. Serve duck with sauce.

  5. To prepare sauce, Mix with about 1/2 cup of water. Put to frying pan and fry. Thicken sauce with corn flour or starch flour.

  6. Decorate duck with tomato slices and place the coriander leaves around duck.
