1lb prawns, shell
remove and mince or finely chopped
salt and pepper to
taste
1 tsp MSG
1 dessertspoonful
tapioca flour or corn flour
1 tbsp lard or
cooking oil (for seasoning prawns)
3-4 tbsp cooking
oil (for frying omelet)
Sauce:
1 dessertspoonful
chopped chilies (optional)
3 tbsp oyster
sauce
4 servings
Method:
Beat the eggs. Add
salt and pepper.
Heat frying panwith cooking oil (about 1 tbsp). Add 2 or
3 tbsp of beaten egg mixture and fry for 3
minutes.
Turn on to the
other side and fry for 3 minutes. Make 3 or 4
round sheets of omelet. Mix prawn meat with
salt, MSG and pepper.
Place each sheet
of omelet on a plate and spread the minced
shrimp meat. Roll up like a Swiss roll. Place
the three or four egg rolls on a plate and steam
for 10-15 minutes.
Cut fish rolls
into thin slices. Serve whilst hot with sweet
and sour sauce or oyster sauce.
Encircle the dish
with thin slices of cucumber or thin slices or
carrots.
