Method:

Slice eggplant, .diagonally into 3 cm (1
1/4inch) size. Peel and cut potatoes into same size. Cut
tomatoes and onions into eight sections, and cut
sliced beef into bite sizes.

Soak eggplant and drain.
Heat 3 tablespoons of oil and fry till eggplant
turns color. Set aside.

Add remaining oil. Fry garlic, sliced ginger, onion
and beef together. Add potatoes, tomatoes and
seasoning.

Remove to deep pan. Add eggplant and simmer over low
heat with lid on for about 40 minutes.
