Chinese Recipes - Technicolor Noodle Salad Recipe

Ingredients 

  • 1 lb lettuce

  • 6 oz crab meat

  • 2 white turnip or 1lb  water chestnuts or bamboo shoots

  • salt and pepper to taste

  • 3 tbsp oil

  • 3 tbsp lard

  • 3 oz peanut oil or vegetable oil

  • 1 tbsp chopped onions

  • 4 oz roast or lean pork

  • 1/2 oz Chinese mushrooms, soak in water for 15 minutes and remove the stalks

  • 4 oz rice noodles (break into 4 in lengths)

  • 1/2 lb peanut oil or vegetable oil for frying

  • 1/2 tsp MSG (optional)

  • 2 tbsp golden bread crumbs

6 to 8 servings


Method:

  1. Wash the lettuce thoroughly. Use scissors to cut the lettuce into individual cup shapes.

  2. Cut turnip, mushrooms and roast pork into thin strips.

  3. Fry rice noodles noodles in deep hot oil. Drain well and, when cold, press the rice noodle with the fingers finely.

  4. Heat the frying pan with 3 tbsp cooking oil or lard. Add chopped onions and fry till golden brown.

  5. Put in mushrooms, roast pork, crab meat and fry for about 3 minutes. Add pepper, salt and turnip and fry for another 5 minutes.

  6. When cooked, put 1 dessertspoonful of the fried ingredients into each lettuce. Add 1 dessertspoonful of fried rice noodle. Then top each lettuce with 1 tsp of golden bread crumbs.

  7. Serve whilst hot on a vegetable dish and garnish with parsley.
