Dim Sum and Snacks Recipes - Crispy Vegetables with Eastern Dressing

Ingredients

  • 200g broccoli

  • 200g cauliflower

  • 1 bunch fresh asparagus

Eastern Dressing

  • 2 tablespoon oil

  • 1 tablespoon sesame oil

  • 2 tablespoons soy sauce

  • 2 tablespoons lime juice

  • 2 cloves garlic, crushed

  • 1 teaspoon sugar

  • 1/2 teaspoon grated fresh ginger

  • 2 teaspoons fresh chopped coriander


Method:

  1. Cut the broccoli and cauliflower into small florets. Trim the asparagus of any woody ends and cut in half. Plunge the vegetables into boiling water for 3 minutes so that they retain their crispness. Drain the vegetables and immerse in very cold water; this will help them retain their color.

  2. Drain the vegetables well, place in a serving bowl and serve with Eastern Dressing.

  3. To make Eastern Dressing: Put the oil, sesame oil, soy sauce lime juice, garlic, sugar, ginger and fresh coriander in a bowl and whisk until combined.
