Recipes - Crispy Vegetables with Eastern Dressing
Ingredients
200g broccoli
200g cauliflower
1 bunch fresh asparagus
Eastern Dressing
2 tablespoon oil
1 tablespoon sesame oil
2 tablespoons soy sauce
2 tablespoons lime juice
2 cloves garlic, crushed
1 teaspoon sugar
1/2 teaspoon grated fresh
ginger
2 teaspoons fresh chopped
coriander
Method:
Cut the broccoli
and cauliflower into small florets. Trim the
asparagus of any woody ends and cut in half. Plunge
the vegetables into boiling water for 3 minutes so
that they retain their crispness. Drain the
vegetables and immerse in very cold water; this will
help them retain their color.
Drain the
vegetables well, place in a serving bowl and serve
with Eastern Dressing.
To make Eastern
Dressing: Put the oil, sesame oil, soy sauce lime
juice, garlic, sugar, ginger and fresh coriander in
a bowl and whisk until combined.
