Dim Sum and Snacks Recipes - Prawn and Coriander Toast

Ingredients

  • 500g raw prawns, shelled and divined

  • 8 spring onions, chopped

  • 1 stalk lemon grass, chopped

  • 1 clove garlic crushed

  • 1 egg white

  • 1 tablespoon oil

  • 1 tablespoon chopped fresh coriander leaves

  • 1 tablespoon fish sauce

  • 2 teaspoons chili sauce

  • 1 teaspoons lemon juice

  • 8 slices stale bread, crusts removed

  • oil, for shallow frying


Method:

  1. Combine the prawns, spring onions, lemon grass, garlic, egg white, oil, coriander, sauces and lemon juice in a food processor. Process until finely chopped.

  2. Spread the prawn mixture generously over the bread. Cut each slice into 4 triangles.

  3. Heat 1-2 cm oil in a pan; add the bread and cook, prawn side down, for 2-3 minutes. Turn over and cook the other side for 1 minute or until golden and crisp. Drain well on paper towels.
