Dim Sum and Snacks Recipes - Quail Eggs with Coriander and Mint Mayonnaise

Ingredients

  • 24 quail eggs

  • 1 tablespoon fresh coriander

  • 1 tablespoon fresh mint

  • 1/2 cup mayonnaise

  • 1/2 cup plain yoghurt

  • 1 teaspoon curry powder

  • 1/2 teaspoon sugar salad leaves, for serving


Method:

  1. Place the eggs in a pan of cool water and bring to the boil. Boil gently for 5 minutes then. drain and immerse in cold water. (This will prevent the yolks discoloring. )

  2. Finely chop the coriander and mint. Combine with the mayonnaise, yoghurt, curry powder and sugar in a bowl. Gently crack the eggs and peel off the shells.

  3. Cut the eggs in half lengthways, arrange on the lettuce leaves and top with mayonnaise.
