Dim Sum and Snacks Recipes - Spicy Fish Skewers

Ingredients

  • 1 green chili, seeded

  • 1 clove garlic, crushed

  • 2 spring onions, chopped

  • 1 teaspoon grated ginger

  • 1/2 teaspoon ground coriander

  • 40 g macadamia nuts, chopped

  • 1 stem lemon grass, finely chopped

  • 1 tablespoon oil

  • 259g white fish fillets

  • 1 tablespoon soy sauce

  • salt and black pepper, to taste


Method:

  1. Combine the chili, garlic, spring onion, ginger, coriander, macadamia nuts and lemon grass in a food processor. Process until mixture becomes a smooth paste.

  2. Heat the oil in a pan and cook paste over medium heat for 4 minutes or until golden brown. Allow to cool.

  3. Process the fish in a food processor until very finely minced. Add the cooked paste, soy sauce, salt and pepper and process to blend together. Refrigerate until chilled through (about 1 hour).

  4. Mould heaped tablespoons of the mixture around wooden skewers. Cook under a preheated hot grill for 3 minutes on each side or until golden brown. Serve hot with satay sauce.
