Recipes - Thai Beef Sticks
Ingredients
500 g fillet or
rump steak
2 teaspoons sesame oil
1-2 cloves crushed garlic
4 cm piece finely chopped lemon
grass root
2 tablespoons
chopped fresh coriander
roots and leaves
1 tablespoon sweet chili sauce,
1 tablespoon fish sauce
1 tablespoon lime juice
2 teaspoons soft brown sugar
2 tablespoons
each of fresh
chopped mint and opal or purple basil
1 tablespoon soy
sauce
Method:
Trim fillet or
rump steak of excess fat and sinew. Cut the beef
into small cubes and place in a large bowl.
Combine 2
teaspoons sesame oil, 1-2 cloves crushed garlic, 4
cm piece finely chopped lemon grass root, 2
tablespoons chopped fresh coriander roots and
leaves, 1 tablespoon sweet chili sauce, 1
tablespoon fish sauce, 1 tablespoon lime juice, 2
teaspoons soft brown sugar, 2 tablespoons each of
fresh chopped mint and opal or purple basil and 1
tablespoon soy sauce in a small jug or bowl. Pour
over the meat and stir to combine. Cover and
refrigerate for several hours or overnight.
Thread the meat
onto skewers alternately with wedges of red onion.
Cook ort a lightly oiled preheated grill or barbecue
flat-plate for 2-3 minutes each side or until
tender. Brush with marinade while cooking.
