Dim Sum and Snacks Recipes - Thai Corn Pancakes

Ingredients

  • 2 cups frozen corn kernels

  • 3 spring onions, finely sliced

  • 4 cm piece ginger, finely grated

  • 2 cloves garlic crushed

  • 1/2 cup chopped coriander leaves

  • 1/4 cup corn-flour

  • 2 eggs, beaten

  • 2 teaspoons fish sauce

  • 1 teaspoon soft brown sugar

  • oil, for shallow frying


Method:

  1. Combine the corn, spring onion, ginger, garlic and coriander in a large bowl. Blend the corn-flour, egg, fish sauce and sugar in a separate bowl; stir into corn mixture and beat with a wooden spoon.

  2. Heat 1-2 cm oil in a large pan; add a tablespoon of mixture and cook over medium heat for 2 minutes or until crisp on base.

  3. Turn over gently and cook other side for 1 minute. Repeat with remaining mixture. Drain on paper towels and serve immediately.
