Dim Sum and Snacks Recipes - Thai Fish Cakes

Ingredients

  • 250g boneless fish fillets, chopped

  • 4 spring onions, chopped

  • 2 cloves garlic crushed

  • 2 tablespoons chopped fresh coriander

  • 1 egg

  • 1 tablespoon Thai fish sauce

  • 2 teaspoons chili sauce

  • 1 teaspoon soy sauce

  • 1/2 teaspoon finely grated lime rind

  • 1 tablespoon lime juice

  • 1/2 teaspoon chopped chili

  • 1/2 cup rice flour

  • oil, for shallow frying


Method:

  1. Process the fish, spring onions, garlic, coriander, egg, sauces, lime rind and juice, chili and rice flour in a food processor for 60 seconds or until finely chopped and mixed.

  2. With oiled hands, shape the mixture into small patties. Heat 1-2 cm oil in a pan and cook the patties over medium heat for 2-3 minutes each side or until golden. Drain well and serve with sweet chili sauce, if desired.
