Chicken Livers Recipe
Ingredients

1 tablespoon oil

2 medium onions, sliced

1 cup (300 g) chicken livers,
rinsed and chopped

1/2 teaspoon ground red pepper
-
1/2 teaspoon ground coriander
-
1/2 teaspoon Garam Masala (refer
recipe)

1/2 teaspoon grated ginger
-
1 medium tomato, blanched,
peeled and diced
-
1/4 teaspoon salt
-
1/4 teaspoon ground black
pepper

Minced coriander leaves (cilantro), to garnish
Method:
-
Heat the oil in a
skillet and stir-fry the onions until transparent.
Add the chicken livers and continue to stir-fry
until the livers just start to change color.

Add the red
pepper, coriander, Garam Masala and ginger, stir-fry
for 2 minutes, then add the tomatoes. Cook over
high heat for 5 minutes or until the livers are
cooked and the sauce is reduced.

Liquidize in a
blender for a smooth pate or mash in the wok if you
prefer a coarse texture. Season with salt and
pepper, sprinkle with coriander leaves, and serve
warm, spread on hot buttered toast.
Note: To
remove the skin with ease, blanch the tomatoes in
boiling water before peeling.
