Indian Appetizers Recipes - Chopped Masala Chicken Livers Recipe

Ingredients

  • 1 tablespoon oil

  • 2 medium onions, sliced

  • 1 cup (300 g) chicken livers, rinsed and chopped

  • 1/2 teaspoon ground red pepper

  • 1/2 teaspoon ground coriander

  • 1/2 teaspoon Garam Masala (refer recipe)

  • 1/2 teaspoon grated ginger

  • 1 medium tomato, blanched, peeled and diced

  • 1/4 teaspoon salt

  • 1/4 teaspoon ground black pepper

  • Minced coriander leaves (cilantro), to garnish


Method:

  1. Heat the oil in a skillet and stir-fry the onions until transparent. Add the chicken livers and continue to stir-fry until the livers just start to change color.

  2. Add the red pepper, coriander, Garam Masala and ginger, stir-fry for 2 minutes, then add the tomatoes. Cook over high heat for 5 minutes or until the livers are cooked and the sauce is reduced.

  3. Liquidize in a blender for a smooth pate or mash in the wok if you prefer a coarse texture. Season with salt and pepper, sprinkle with coriander leaves, and serve warm, spread on hot buttered toast.

Note: To remove the skin with ease, blanch the tomatoes in boiling water before peeling.
