Diced Chicken Masala on Toast

Ingredients
1/4 cup (60 g)
yogurt
1 teaspoon chili
paste or minced
fresh chilies
1/2 teaspoon
Garam Masala (refer recipe)
1/2 teaspoon crushed garlic
1/2 teaspoon
minced ginger
1 tablespoon
lemon juice
8 oz (250 g)
boneless chicken, diced
1 1/2 tablespoons oil or
butter
1 medium onion,
sliced
1/4 teaspoon
ground coriander
1 teaspoon ground
red pepper
1/2 teaspoon
ground turmeric
1/2 tablespoon
curry powder
1 teaspoon
paprika
5 medium
tomatoes, or 1/2 can (8 oz/225 g)
whole tomatoes, diced
2 tablespoons
minced coriander
leaves (cilantro)
1/4 teaspoon salt
1/4 teaspoon ground black pepper
Method:
In a large bowl,
combine the yogurt, chili paste, Garam Masala, 1/4
teaspoon garlic, 1/4 teaspoon ginger and lemon
juice with the chicken. Mix thoroughly and marinate
for 30 minutes.
Heat the oil in a
skillet and stir-fry the onions until lightly
browned. Add the spices and the remaining garlic and
ginger, and continue to stir-fry for 2 to 3 minutes
until fragrant. Add the chicken (and any marinade).
stir for 1 minute, then add the tomatoes. Simmer
uncovered until the chicken is tender.
Remove the
chicken and simmer the sauce until it has thickened.
Remove the sauce from the heat and stir in the
coriander and chicken. Season with salt and pepper
and serve warm, spread on hot buttered toast.
