Indian Basic Recipes - Green Mango Chutney (Mangga Thuvial) Recipe

Ingredients

  • 3 large unripe green mangoes (total of about 1 lb/500 g)

  • 1/2 teaspoon sesame seeds

  • 3-4 dried chilies, cut into lengths

  • 2 medium onions, diced

  • 2 tablespoons freshly grated or moistened unsweetened desiccated coconut

  • 10 curry leaves

  • 1 tablespoon minced coriander leaves (cilantro)

  • 1 teaspoon oil

  • 1 teaspoon black mustard seeds

  • 1/2 teaspoon Bengal gram (channa dal) or yellow split peas

  • 1/4 teaspoon salt


Method:

  1. Peel the mangoes, discard the seeds and dice the flesh.

  2. Dry-roast the sesame seeds and chilies in a nonstick wok or skillet for 2 minutes until crisp.

  3. Place the mango, sesame seeds, chilies, onion, coconut, curry leaves and coriander leaves in a blender or food processor, and pulse a few times to just mix.

  4. Heat the oil in a wok or skillet and stir-fry the mustard seeds and Bengal gram for 1 minute until the mustard seeds begin to pop. Add the mango mixture to the wok and mix well. Season with salt and serve.
