Indian Basic Recipes - Lemon Mango Pickles (Nimbu Aur Aam Ka Achar) Recipe

Ingredients

  • 1 lb (500 g) lemons, washed, cut into wedges and deseeded

  • 5-7 green chilies, halved lengthwise

  • 2 unripe green mangoes (8 oz/250 g), peeled and diced

  • 1/2 cup (125 ml) lemon juice

  • 1 tablespoon ground cumin

  • 1 tablespoon ground turmeric

  • 1 teaspoon ground red pepper

  • 1 1/2 tablespoons salt

  • 2 tablespoons sugar

  • 1 cup (250 ml) mustard

  • oil or vegetable oil


Method:

  1. Combine the lemons, chilies, mango and lemon juice in a bowl and sprinkle with the spices, salt and sugar. Place in a large glass jar, cover loosely with a cloth and leave in the sun for 6 days.

  2. Heat the oil to smoking point, allow to cool, then stir into the lemon mixture. Leave in the sun for another 4 days then cover the jar with a lid, Store in a cool, dry place away from the light. Keeps for several months.
