 Onion Mustard Pickles (Pyaz Ka Achar) Recipe

Ingredients

  • 1/2 cup (125 ml) mustard oil or vegetable oil

  • 2 tablespoons black mustard seeds

  • 1 teaspoon ground red pepper

  • 1/2 teaspoon ground turmeric

  • 1 1/2 tablespoons white vinegar

  • 2 tablespoons sugar

  • 1/4 tablespoon salt

  • 1 1/2 tablespoons dried mango powder (amchoor)

  • 5-8 green chilies

  • 15 cloves garlic, peeled

  • 1 tablespoon grated ginger

  • 1 tablespoon crushed garlic

  • 1 lb (500 g) onions, peeled and sliced

  • 2/3 cup (150 ml) of freshly squeezed lime juice


Method:

  1. Heat the oil in a wok to smoking point, then set aside to cool.

  2. Place the mustard seeds, red pepper, turmeric, vinegar, sugar, salt and mango powder in a blender or food processor, and grind to a paste. Add this to the oil, together with the remaining ingredients.

  3. Stir to mix well and store in sterilized jars, covering the pickles completely with oil. Keeps 3 to 4 weeks.
