Achar) Recipe
Ingredients

1/2 cup (125 ml)
mustard oil or vegetable oil
-
2 tablespoons
black mustard seeds
-
1 teaspoon ground red pepper
-
1/2 teaspoon
ground turmeric
-
1 1/2 tablespoons
white vinegar
-
2 tablespoons
sugar
-
1/4 tablespoon
salt
-
1 1/2 tablespoons
dried mango powder (amchoor)

5-8 green chilies
-
15 cloves garlic,
peeled
-
1 tablespoon
grated ginger
-
1 tablespoon
crushed garlic
-
1 lb (500 g)
onions, peeled and sliced

2/3 cup (150 ml) of
freshly squeezed lime juice
Method:
-
Heat the oil in a
wok to smoking point, then set aside to cool.
-
Place the mustard
seeds, red pepper, turmeric, vinegar, sugar, salt
and mango powder in a blender or food processor, and
grind to a paste. Add this to the oil, together with
the remaining ingredients.

Stir to mix well
and store in sterilized jars, covering the pickles
completely with oil. Keeps 3 to 4 weeks.
