Indian Basic Recipes - Savory Cumin Drink (Jal Jeera)

Ingredients
2 tablespoons
black cumin seeds
2 teaspoons dried mango powder (amchoor)
1 teaspoon ground
ginger
1/2 teaspoon
black peppercorns
1 1/2 teaspoons
dried mint
1/2 teaspoon
ground red pepper
1/4 teaspoon
carom seeds (ajwain)
1/4 teaspoon
asafetida powder
4 cloves
1 1/2 teaspoons
rock salt
1 teaspoon salt
Fresh mint
leaves, to garnish (optional)
Method:
Dry-roast all the
ingredients in a nonstick wok or skillet over low
heat, stirring continuously for 3 to 4 minutes until
fragrant. Allow to cool, then grind to a powder in a
blender or mortar and pestle. Keep in a tightly
covered jar.
To prepare the
drink, mix 1 teaspoon of this powder with 1 glass of
hot or iced water. Add 1 teaspoon Mint Coriander
Chutney (see recipe) and 1/4 teaspoon sugar to each
glass. Garnish the drink with fresh mint leaves.
