Indian Rice Recipes - Rice and Lentils (Tuvar Dal Khichdee) Recipe

Ingredients

  • 1/2 cup (100 g) uncooked rice

  • 3 tablespoons yellow lentils (tuvar dal) or Bengal gram (channa dal) or green mung beans (moong dal)

  • 1 cinnamon stick (2 in/5 cm)

  • 2 cloves

  • 2 cardamom pods, bruised

  • 1 1/2 cups (375 ml) water

  • 1 teaspoon salt

  • 1 tablespoon oil

  • 1/2 teaspoon cumin seeds

  • 1-2 green chilies (optional)

  • Pinch of asafetida powder

  • 1 teaspoon ground turmeric


Method:

  1. Wash the rice and the lentils. If using yellow lentils or Bengal gram, simmer them in water until just soft, then drain. This step is not necessary if using green mung beans.

  2. Combine the lentils with the rice, cinnamon stick, cloves, cardamom pods, water and salt. Cover and simmer over low heat for about 1 hour until very soft. Add water to the pot if the mixture thickens too much.

  3. Heat the oil in a wok or skillet and stir-fry the cumin seeds, chilies, asafetida and turmeric for 1 minute until they begin to crackle. Pour over the top of the cooked rice and serve hot.
